Mushroom Varieties

 These Japanese mushrooms grow in tight, packed clusters. They are tender and chewy with a mild nutty, herbal flavor. They are lovely for sautéing, braising, stewing or roasting.

 

Black pearl/black oyster mushrooms have a lighter flavor & uniform texture. Firm with a softer, chewier texture than white trumpet. Excellent used in faux scallop or faux seafood stew-type dishes.

 

A great for everything, super versatile mushroom.

Golden Enoki mushrooms are tender and crisp with a crunchy bite and a mild, fruity, and peppery flavor. Popular in East Asian cuisine. Excellent for stir fry and ramen!

Mushrooms are fragrant and light, with a texture lovely for pasta and seafood dishes. They’re fragrance is stronger than their flavor so don’t be alarmed! They are fresh and mild tasting.

These are a very familiar face, and likely the most commonly seen gourmet mushroom. They have a bold sweet flavor & can be sliced and used in nearly any application. Shiitakes can be stuffed, grilled, or simply sautéed. They are excellent in soups, a wonderful sandwich topper and just may be your ticket into mushrooms that your kids can enjoy! These are excellent for your go-to everything mushroom. Sautés, soups, casserole, and even gravy.

 

Woodsy and earthy tasting, lovey in a range of applications from stir-fry to tossed with pasta.
These are similar in the strength of flavor to shiitake. Their unique flavor easily becomes the highlight of any dish. Prepare with red meats, in pastries, pastas, soups or sautéed on their own. Maitakes are great for roasting, grilling, baking, frying, sautéing, and stir-frying. Lovely tossed into pasta, sprinkled over pizza, or cooked into omelets.

 

These are some of the most popular culinary mushrooms in Japan, and can be used in a variety of applications from sautés, to grills, to boiling for soups or stews. The caps can be a bit gelatinous and so these are also great for sauces!

 

These mushrooms are mild, tender and nutty, with a delicate texture. Great for frying, stir fry, or braising. Blue gray oysters can add a lovely flavor to lighter fare- white meat, white wine, eggs, pastas, soups. These are an easy first step for novice gourmet mushroom eaters- similar in flavor to buttons and creminis, but much more tender in texture.

 

Aka King Oysters, White Trumpets have a firm, uniform texture throughout, these are the mild flavored Euro-Asian cousins of our native Blue Gray oyster.

Wonderful for marinating, grilling, roasting, sautéing, or stir-fry, as they really hold their own when cooked. White Trumpets have a savory-umami flavor profile, and are versatile enough to be paired with dishes from Japanese to French cuisine.

 

These are one of Primordias more exotic mushrooms. They are a bit fuzzy, hence the name. Lion’s Mane has the texture of shellfish when cooked, and is excellent when used in dishes like a vegetarian “crab cake”.

These are an Italian variety with prominent flavor and a fragrant edge. The entire mushroom is edible.

They can be cooked lightly, or stand up to quite a bit of cooking. They pair great with cream sauces to serve over pork, chicken or pasta, and are also lovely in a stir-fry, braised, cooked into risotto, casseroles, sauces, & soups. Pioppino are also delicious pan fried on their own until crispy, almost like a little mushroom fry.

These mushrooms are buttery, nutty, earthy and have loads of applications. Commonly used in risottos, stir-fries, soups, stews, bruschetta, and egg dishes such as scrambles, frittatas, or omelets. They can be pan-fried and served as a side dish to salmon or grilled steak, or pickled for extended use. Also known as Cinnamon Cap, these Mushrooms pair well with grilled meats, seafood, garlic, onions, chives, sweet peppers, cherry tomatoes, tarragon, parsley, red wine, miso, and creamy cheeses.

These are a beautiful mushroom, similar in consistency to the more common blue gray. Golden oysters are light and fresh and pleasantly chewy, fruity, & nutty. Some describe their scent like watermelon and their taste like cashews. Lovely braised with meats, gently sautéed with lighter fare or crisped up like bacon.
