Simple and Refreshing Summer Bruschetta & Avocado Toast

Tomatoes are abundant and so delicious this time of year! And, thankfully, they are also highly versatile and can be in used a number of dishes for every meal. This simple toast, perfect for breakfast, lunch or a snack, incorporates my love of both tomatoes and avocado! I LOVE bruschetta – it has always been one of my favorite appetizers at every and any Italian restaurant! However, I don’t make it at home as often as I would like, and these organic fresh tomatoes, basil and garlic from Taproot Farm gave me just the inspiration I needed to craft it up! This recipe is perfect for when you want something fresh and easy but don’t want to make a ton of dishes or use a stove or oven. Also, if you’re an avocado lover like me, this gives you an additional option to transform that everyday avocado toast into something even more spectacular! Toasted Whole Grain Bread, Topped with Smashed Avocado and a Mixture of Fresh Tomatoes, Garlic, Basil, Capers, and Olive Oil, Sprinkled with Black Pepper & Asiago Cheese

Makes 1 Serving (*Can Easily be Multiplied)

Dry Measuring Cups
Measuring Spoons

Small Mixing Bowl

Ingredients:

1 Slice Bread of Choice, Toasted
1/2 Avocado, Mashed
1/3 Cup Tomato, Chopped into Small Pieces
1 Clove Garlic, Minced
1 to 2 Tablespoon(s) Fresh Basil Leaves, Torn (*Depends on taste preferences – I used 2)
Dash of Salt
Dash of Pepper
1 Teaspoon Capers
1 Teaspoon Olive Oil
Optional for Topping: Grated cheese of choice (I used Asiago), extra basil and extra black pepper

Instructions:

  1. First, combine chopped tomato, minced garlic, torn basil leaves, dash of salt & pepper, capers and olive oil in a small mixing bowl, stirring to combine. Set aside.
  2. Next, toast bread of choice.
  3. After bread is toasted, mash avocado on top.
  4. Pour bruschetta mixture over it and top with extra basil, grated cheese and black pepper.
  5. Enjoy! 🙂
