Anyone else quick to throw away or compost those root vegetable greens because you don’t exactly know how to use them? I was personally guilty of doing that for years. Yet the greens are a vital part of the vegetable, packed with flavor and nutrients that make a terrific addition to a variety of dishes.

I love these greens because they are very “earthy” in flavor. This specific recipe uses a mixture of green tops from radishes and hakurei turnips. I blend these greens with strawberries to cut some of the natural bitterness, but the result is a smooth, earthy flavor that is incredibly energizing and refreshing.

I recommend if you are hesitant to try this combination that you use half root vegetable greens/ half spinach (milder in flavor) or maybe some additional fruits/natural sweetener. I always enjoy smoothies as a refreshing way to hydrate and get additional nutrients during the day.

1. Combine all ingredients (root vegetable greens, fresh strawberries, milk/milk alternative, yogurt/yogurt alternative, ice cubes and sweetener (if using) into a blender.

2. Blend until smooth in texture.

3. Pour and enjoy cold with additional toppings of choice.
