Asiago Walnut Swiss Chard
1 bunch of swiss chard
1/4 cup grated asiago cheese
1/4 cup toasted walnuts
olive oil
lemon juice or white wine vinegar
1. Remove the stems from the chard and chop finely. Stack the leaves and slice into 1 inch ribbons. Heat olive oil in a pan and saute chard stems for a couple of minutes, then add the leaves. Stir a couple of times, then cover to let the chard steam a bit. When leaves are cooked, but still bright green, remove from heat.
2. Toss with 1/4 cup grated asiago cheese and 1/4 cup toasted walnuts. Option: sprinkle with lemon juice or white wine vinegar or a bright contrast to the rich flavors of cheese and nuts.
