Is there anything better than toasty bread and gooey cheese?
Yes. Bacon and spinach + toasty bread and gooey cheese. Especially if the spinach comes from your first box of veggies from Taproot Farm CSA and the toasty bread comes from The Daily Loaf bread share!
Grown Up Grilled Cheese
makes 2 sandwiches
4 slices good sourdough bread
2 handfuls spinach, washed
8 slices bacon (about 1/2 a pound), cooked
8 slices cheese of your choice (I used burrata, a type of fresh mozzarella filled with oozing buttercream)
Parmesan cheese, freshly grated

1. Prep: Wash spinach, grate/slice cheese, cook bacon to your liking. For a mess-free approach, try laying slices on a baking pan and toasting your bacon at 425 degrees in a toaster oven or regular oven. It takes about 15-20 minutes.
2. Assemble: Slather butter on the outside sides of the bread. Layer cheese, bacon, and a handful of spinach on one slice of bread. Sprinkle liberally with parmesan cheese. Top with another slice of bread and smoosh it down so it all stays together. Repeat with second sandwich.
3. Cook: Heat a griddle or frying pan on medium–low heat. Lay sandwiches gently on hot pan. Now here’s the only hard part…be patient. We don’t want to burn these gorgeous things, so don’t turn up the heat. Don’t flip incessantly (which I’m prone to do). Don’t cover them. Just wait it out until the bottom side is perfectly golden brown. Gently flip sandwiches and brown on the second side. If all goes according to plan, the sandwich will be perfectly crusty on the outside, with gooey cheese and wilted spinach on the inside. If it looks like the bread is browning before the cheese is melting, turn down the heat.
