A colorful and delicious salad made of mixed greens, blood oranges, French radishes, watermelon radishes, goat cheese, pistachios, golden beets and a key lime honey drizzle.

This is, undoubtedly, the salad of my dreams. The colors alone fulfil that. Add in taste and you have a totally different dimension! I am not a lover of the winter months, but I do love my citrus. And when I stumbled across blood oranges in the market the other day, I just had to take some home with me. Paired with the bold colors of the watermelon radishes and golden beets, this salad is quite a site. The flavors really balance one another out – the salad and pistachios are savory, the radishes are a bit spicy, the beets and blood oranges are sweet, the cheese is creamy, and the key lime honey adds the perfect “pop” of flavor to tie everything together. What’s not to love? I want to say thank you to Taproot Farm for the incredible organic radishes and golden beets used in this recipe. Optional: Mandoline (*Helps to thinly slice radishes)

Ingredients:

1 Container/Bag Greens of Choice

4 Blood Oranges, Peeled and Sliced (*Remove any visible seeds if possible)

1 Large Watermelon Radish, Peeled and Thinly Sliced

1 Small Bunch French Radishes, Thinly Sliced

1 Small Bunch Golden Beets, Roasted, Peeled and Sliced

1/3 Cup Goat Cheese of Choice (I used a Dill Goat Cheese from Amazing Acres)

1/3 Cup Roasted Pistachios

Black Pepper

Funny Farm Apiaries’ Key Lime Honey (*Or other honey/dressing of choice)

Instructions:

  1. First, cook your beets according to the instructions listed in the header if you haven’t already.
  2. Next, arrange your greens of choice on a salad tray.
  3. Top with beet, radishes and blood oranges.
  4. Sprinkle with crumbles of goat cheese and pistachio pieces.
  5. Add black pepper if desired and drizzle with key lime honey.
  6. Enjoy! 🙂
