My dad made the traditional type of Waldorf salad a lot when I was a kid and I loved it. This version is just slightly changed to add in the great flavors of fresh celery, kohlrabi, and carrot.
1 large apple, diced
2 kohlrabi, peeled and grated or diced (about 1 cup total)
1 cup toasted walnuts
1 cup finely diced celery
½ cup shredded carrot
½ cup raisins
½ cup mayonaise
Salt and pepper
Mix all ingredients in a large bowl and add salt and pepper to taste. Serve all by itself or on a bed of greens.
