This is an excellent side dish recipe that will please everyone. Delicious rutabaga is slowly cooked and then sweetened with a little maple syrup. This dish is finished off with an herby panko mixture to add a little texture and crunch.
1 ½ lbs Rutabaga, peeled and cubed
3 Tbsp butter
3 Tbsp maple syrup
1 tsp salt
¼ cup panko or breadcrumbs
¼ tsp thyme
¼ tsp ground sage
¼ tsp pepper
¼ tsp salt
In a large cast iron skillet melt the butter over medium heat. Add the cubed rutabaga, cover and cook, stirring every couple of minutes, for about 10-15 minutes until the rutabaga is tender.
Meanwhile, mix the panko, thyme, sage, pepper, and salt in a small bowl.
Remove the lid from the rutabaga, add the maple syrup and turn the heat up to medium high, stirring constantly for about 5 minutes until the rutabaga is slightly caramelized. Turn the heat off and add the panko/herb mixture. Stir and transfer to a serving bowl. Taste and add any extra salt or pepper if needed.
