Toast is a simple concept. And it can easily be made magnificent with fresh ingredients. I used some tender kale leaves to make a very green sauce which I drizzled over the beautiful watermelon radishes.
For the green sauce:
1/2 cup kale leaves (or chard)
2 Tbsp tahini
1/2 tsp salt
2 tsp lime juice
3 Tbsp water
Blend all of these ingredients and add more water if necessary to make it thinner. Taste and add anything else that you feel it needs.
Make a few pieces of toast, spread a little goat cheese on there, layer on some thinly sliced watermelon radishes, sprinkle some salt, then drizzle on your green sauce and maybe some fresh herbs or micro greens.
