Ingredients
Serves: Makes 1 Serving (*Can Easily be Multiplied)
Apple and Fennel Salad
- 3 Heaping Cups Greens of Choice (I used spinach, but you can use lettuce, mixed greens, etc.)
- 1 Apple, Sliced Thinly (I used a local gala apple)
- 1 Bulb Fennel,Sliced into Thin Strips
- Pumpkin Seeds
- Walnuts
- Goat Cheese
- Black Pepper
- Dressings of Choice (I used a balsamic reduction)
Method
This salad serves as almost a “bridge” between the Summer and Winter worlds – apples, greens and fennel tied together with some crunchy walnut and pumpkin seed toppings. Very simple and nourishing, this salad is an easy go-to for a quick lunch or dinner. I’m always a fan of salads I can throw together with ingredients I already have at home.
Instructions:
- Combine your greens with apple slices, fennel strips, pumpkin seeds and walnuts.
- Sprinkle with goat cheese and black pepper.
- Drizzle with balsamic (or dressing of choice).
