Ingredients

Collard green balls
- 3 cups finely chopped and sauteed greens such as collard greens, spinach, kale, or chard. You can also use any frozen greens making sure to thaw and drain well.
- 2 cups bread crumbs or panko
- ¾ cup shredded cheese, I used a mixture of parmesan and manchego
- ¼ cup (2 ounces) cream cheese
- 1 stick of butter, melted
- 4 eggs
- 1-2 cloves garlic, finely minced
- 1 small red pepper, finely diced
- 1 tsp salt
- 1 tsp pepper
- 2 Tbsp fresh chopped herbs
- zest of 1 lemon

This is another crowd pleasing recipe for any gathering. It is easy to put together and I usually prep it the day before so all that has to be done the next day is throw them in the oven. I usually serve these by themselves, but they are also great with a few dipping sauce options such as whole grain mustard, homemade tomato sauce, or a sour cream and herb dip.
Mix everything together in a large bowl. I used my hands to mix this making sure everything was really well combined. Cover and refrigerate for at least 2 hour or overnight.
Pre-heat your oven to 350 degrees.
You can use a baking sheet or a mini muffin tin, I used both. Roll the mixture into bite sized balls and place on baking sheet. Bake for 20-25 minutes, until just crispy. Do not over bake.
